the eau de vie starts its life in new oak barrels...
It then gets moved to the large vats where the cellar master makes a decision on how long it should be there, before it is moved into old oak barrels to mature into the cognac that you will know.
Ageing in old oak.
The oldest cognac in the underground cellar which the monks originally used as a church in the 11th century.
After about 90 years the cognac is moved into glass demijohns. This particular cellar is cognac from around 1900.....
and here are the demijohns from about 1873 !
These get used in small quantities to blend the cognac that you can buy today.
